Zingy Prawn Noodles

 

Serves 4

1 tin Coconut Milk

About 30 Prawns, cooked

400g Rice Noodles, cooked according to the pack

Selection of crisp veg such as green beans, courgettes, sugar snaps,Β 

Spring Onions

Mint

Coriander

2 tsp Chilli Jam OR 1 tspTomato Relish & 1tsp Chilli Paste

Juice of 1 Lime

1-2 tablespoons Nap Pla (Thai Fish Sauce) to taste

2 tsp Chilli Crunch

Method:

Place the coconut milk in a pot and simmer to reduce by half-should take about 5 minutes.

In the meantime, cook your prawns and noodles.

When the coconut milk has cooled a little place it in a blender with the chilli jam or relish & chilli paste. Add the herbs and lime juice and blitz very well. Add the Nam Pla to taste- add a little, taste and add more if necessary- it’s easy to add to much and ruin the sauce.

Place the noodles, your chosen veg, herbs and prawns into a large bowl. Add half the sauce, toss well and add the rest if necessary.

Plate up and finish with the chilli crisp and spring onions. Add some more herbs to garnish.
